I forgot to mention that you can flash freee the muffin tops. Lay them on a cookie sheet, make sure they are not touching. Freeze until firm, then you can place them in a zip lock bag. They thaw fairly quickly or you can place them in the microwave for about 30 seconds. Flash freezing is the way to go when you don't want things to stick together. I do this pancakes and french toast too. On those busy weekday mornings, I just take one out of the freezer and pop in the microwave. Instant...healthy breakfast. :-)
Today is sugar cookie baking day, my kids love this day. It's fun but I'm not so fond of the huge mess. LOL!
